Jilly's Cupcake Bar Receives Warm Welcome in Des Peres
The popular, hip Delmar Ave. cupcake bar, Jilly's, is now satisfying all your cupcake needs in Des Peres.
How does a quiet engineering office near the Des Peres post office become the most happening place in town? If you’re David Pollmann, a consulting engineer, you empty out your office furniture, tear down the walls and build Jilly’s Cupcake Bar a-Go-Go.
Pollmann’s primary clients in his engineering firm are restaurants. “I design about 150 restaurants a year. I designed Jilly’s original mechanical systems,” Pollman said.
The original Jilly’s is located at Delmar Boulevard and Interstate 170. Started by Jill Segal in July 2008, Jilly’s has expanded four times in four years. Jilly’s has been featured on the Food Network’s Cupcake Wars twice and was crowned champion on its first appearance.
Jilly’s, of course, is known for cupcakes. Each cupcake is a masterpiece. I have not had one I didn’t like. My favorite is the Chocolate Thunder – chocolate cake stuffed with dark chocolate ganache topped with milk chocolate buttercream, vanilla buttercream, chocolate shavings and chocolate bark.
The Des Peres store, located at 1131 Colonnade Center, will have most of the same cupcakes available at the Delmar location. The store is open Monday through Saturday from 8 a.m. to 6 p.m.
Jilly’s also serves soups, salads, sandwiches and was just voted best brunch by St. Louis Magazine. The brunch is definitely worth a trip to Delmar and offers a delicious selection of breakfast and lunch items. My favorites were the heath bar scone, the egg baked with cheese, chicken and broccoli, and the make-your-own-cupcake bar.
Although brunch is not available at the Des Peres location, Jilly's in Des Peres does have something not available in the Delmar restaurant – a brisket bar. Order one of four suggested brisket sandwiches or create your own with by selecting up to four toppings from a choice of cheeses, sauces and toppers. The Des Peres brisket bar is open 10:30 a.m. to 2:30 p.m. daily.
The other soups, sandwiches and salads available in Des Peres are sent fresh from the Delmar store every morning.
“I am marketing and selling Jilly’s products for her,” Pollmann said. “Jill had a to-go concept in mind but never had a location she thought suitable. She trusted my vision of this location and I trust her for quality food.”
Open for just more than a week, this arrangement is clearly working for both parties.
“We sold between 400-500 cupcakes a day in the first five days open,” Pollmann said. “And almost every day we’ve stayed open later than posted hours serving customers.”
A win-win for Pollman and Segal and a victory for Des Peres, Jilly’s Cupcake Bar A-Go-Go is sure to be a success.
